I use IKEA kitchens quite a bit in my general contracting business (check my Houzz page). But whenever I've seen an IKEA kitchen designed and installed by IKEA folks it just somehow looks...mundane. Always executed competently, but missing that designer 'flair" and lacking any effort to customize, or hack, or "think outside the box." So you'd probably get a good, functional kitchen but one lacking is "wow factor." Does that make sense?
