The roots on the Phalaenopsis (the one with the thick roots) look great; it should be potted into a pot about the same size with a medium to coarse bark. Feed it immediately, and then regularly with a strong orchid food. Bark has almost no nutrients and the plant will not make good growth without feeding. Water as soon as the bark dries in Spring, Summer, and Fall. Water less in winter, unless it has flowers.
The other one is a Miltonia. It has fine roots, needs much more water, and prefers cooler conditions. It also will be easier to maintain in a potting mix of fine bark mixed with long-fiber sphagnum, or fine bark with a little peat. If there are mushy dead roots cut them away and remove all the media and replace with new. It needs to be kept more moist. On it I would use your orchid food at half strength. Feed it all year.
