Well, let’s be serious here. I haven’t entirely lost my mind 😂🤣😎. Processed foods for me means eliminating deli, cheeses, some canned beans, sausage, etc. I’m doing it as a process of elimination and if I add something back and get a reaction, I can pinpoint it. Dairy is okay but I always use full fat dairy because anything low fat is loaded with sugar. Oh, yeah, and no sugar to speak of. I use Stevia to sweeten.

Foods I’m eating on a regular basis: fresh fruit, plain yogurt, eggs, tuna, chicken, fish, shrimp, a small filet of beef, rice, sweet potatoes, FROZEN VEGGIES, fresh veggies, and Keto Rediwhip whipped cream (10 cal.).

Make yourself a bowl of cut up fruit for breakfast with a big dollop of yogurt, almonds sprinkled on top. So delicious. Occasionally a fried egg on whole grain bread. Scrambled with mushrooms and Parmesan.

Lunch is a salad or tuna sandwich, chicken salad with pineapple or sliced apples. I’m using sliced apples in place of chips.

Dinner is a protein and a vegetable and a roasted sweet potato, or rice with stir fry veggies.

Do I spend more time in the kitchen, yes I do. Is it worth it, yes I think so. Remember, you have osteoarthritis in your knee, what’s to say it doesn’t appear in other parts of our bodies as we age. You do what is right for you, sweetheart, but cutting out some foods and feeling more energetic and less sluggish is a wonderful thing. I know it’s hard to make this huge adjustment so maybe just cut out bread and sweets to begin with. I hope this helps you too.
