Boy, Hope, I hear ya. I looked at my slab under warehouse lighting and then in sunlight and was still surprised when it was installed. The sample they gave me was not from my slab so it was pretty useless.
I think you should keep looking at least for a bit, although I think most of the whitish granites would look pretty. Online reccomendations aren't always helpful because your stoneyard might not have that kind, but have you considered a black with some veining? I think Virginia Mist is one.
It would be nice if you were a bit more excited about your choice. I think if you're unsure now, it probably won't get better at installation.
I'm going to post a photo. Just look at the island. Most of the "white" granites will end up looking like this. Alaska White is more dramatic and veined, rather than speckly, so if you can find a slab, might be worth a look.
