Carol, here's that pecan pie recipe you have asked about:
Diane's Pecan Pie--loosen your belts and zippers
Oven: 375 degrees F
Ingredients:
Your favorite unbaked pie crust in a 9-inch pie plate
3 eggs
2/3 C. sugar
1/3 C. butter, melted
1 C. light corn syrup
1 tsp. vanilla
1/2 tsp. salt
1 1/2 C. pecan halves
Beat eggs, sugar, melted butter, corn syrup, salt, and vanilla on low speed with mixer until well mixed. Stir in pecan halves. Pour mixture into crust in pie plate. Bake at 375F for 20 minutes; check to see how crust is browning and rotate pie to keep the browning even. Lower oven temperature to 350F, and continue baking another 20-30 minutes. The pie filling should be firm and not jiggly when the pie is moved; remove from the oven when pie is firm. Cool before serving.
My recipe uses extra pecans which cuts down a bit on excessive sweetness. Diane
