remove that entire thing and do a built in fridge surround. (those inset cabs are useless because they sit too far back)
Don't know if you can spring for a countert depth fridge, but it would be the perfect choice.

You could buy something like this and install it yourselfs. (see how flush the fridge fits? that's a counter depth. See how nice you can reach the cabinet above?)
You always remove the cab above your fridge, build a simple box and move it forward, paint, and buy a pantry add-on cabinet.
or, redo the cab above fridge, get some used cabinets, paint, get a remnant stone or butcher block top, and some upper cabs.
I like the open shelving and lower cab next to it.
You could do a beverage bar, a little desk area, or even some pantry cabinets w/shelving.
