I am a fabricator. "One is they did it like that since they were told I’d be doing backsplash everywhere." If they were told there would be backsplash then the backside cut can leave gaps which would be covered by splash. This is normal practice assuming splash. If the fabricator is told no splash (or tile) then the backside will be measured and cut to follow the irregularities in the wall. A 3/8" top round will be far less prone to chipping. Joe is correct chips can be repaired to be barely noticeable if the fabricator is skilled.
