Be careful with cans in the 14' ceiling... Light falls off dramatically with distance. In most homes that have a 8' or 9' ceiling, and the 3' counter height, that can light is only 5' to 6' from the surface it is illuminating. With a 14' ceiling, the light will be 11' away, about twice the distance. Based on the inverse square law of light, that counter is going to have 1/4 of the light from the can with 14' ceiling than if you had 8.5' ceilings.
Depending on the style of house, you might want to consider using suspended track lighting, at about 8' or 9' off of the floor. There's a reason why stores with high ceilings hang the lights down low.
