We have sealed many backsplashes with a traditional sealer, and then have gone back with a waterbased stone sealer in a semi-gloss finish. The only trick to it is to use a clean cloth, put it on with a sponge roller( white 6'' sold at HD), and clean off any excess with the clean cloth. Obviously, test a sample tile before doing the whole backsplash. Both Thompsons waterseal and also Minwax Polycrylic are both good choices.
