"Happy Birthday" to you Anne! ♥ God also blessed me to see age 54 this month (on the 20th). :) I am in month 8 with no period so far....hoping I will make it to 12 months this time, but you never know - lol. Made it to 9 months previously then had a regular period. :(
Glad to hear the ovarian cyst problem is gone. I have suffered with ovarian cyst problems since I was 17 years old (leaking or bursting and causing incredible pain....). Sorry to hear you are sick my dear....that is never fun. Be sure to get plenty of fluids (to keep the mucous flowing and prevent dehydration...) and vitamin C fruits (did you know that 1 kiwi fruit has all the Vitamin C you need in a day? Amazing and in such a small fruit!) and believe it or not, Chicken Noodle Soup (or chicken broth) will help! The Zinc in the Chicken (and broth) is vital. I drink 1 cup of heated Chicken Broth per day, everyday. I haven't had a cold in about 5 years. Hope you get to feeling better soon. ♥ ♥ ♥ I just finished exercising - - getting tougher the older I get!!!! I danced for some cardio for 25 minutes and did some upper body strength training with weights. Tired but feeling accomplished for the day.
Leaving you (and Everyone) with my "Vitamin V Soup" recipe in hopes it will make you (or anyone else!) feel better.
(I eat about 1-2 cups per day!)
"Vitamin C Soup" (more like a stew depending on how much liquid you put into it - - great with crackers or for dunking biscuits or cornbread)
2 pkgs. stew meat
4-5 Idaho Potatoes (peeled, and cut into bite sized chunks)
1 Large Can Tomato Sauce
1 small can Tomato Paste
1 medium size Onion (cut into chunks)
5-6 Garlic Cloves (smashed, peeled and cut up)
Extra Virgin Olive Oil (about 1 cup)
Water
Salt, Pepper, Garlic Powder (the more you put in, the more spicy the soup - it will actually make you sweat if you add lots of pepper and garlic powder!)
Mixed Vegetables (fresh or frozen, and steam them so they are partially cooked but not cooked all the way) * I use Frozen (I add broccoli, carrots, lima beans, green beans, corn kernels, peas, celery, you can literally add any vegetable that you want too. The more the better!) * (You can also use canned veggies like "Veg-All" and add other canned vegetables, however you will lose nutritional value by using canned veggies as most of the nutrition is cooked out in the canning process, plus, you get more salt which you don't really want).
In a large, tall, stockpot, saute' onion and garlic in the olive oil for about 3 or 4 minutes until it begins to soften. Add the stew meat and season with salt, pepper, and garlic powder. Stir and cook until the meat is tender (about 35 minutes or so...slow process) adding water each time the liquid boils out. (I usually add about 4 or 5 cups of water during this process as I like my meat "fork tender".)
When meat is cooked and tender, Season again!! Add tomato paste and stir. Add 1 large can of Tomato Sauce and 1 large can of water. Add cut up potatoes and add more water to cover the potatoes. Season again!! Cook the potatoes until tender (about 25-30 minutes - be sure to keep checking and stirring so the soup does not scorch on the bottom!)
When potatoes are almost tender, add your steamed/drained vegetables. Taste your soup at this point to see if you need to add more water or seasoning. I like mine sort of thick so I don't add more water, but you can! Cook the vegetables in the soup for another 25-30 minutes until you achieve the tenderness you want.
Serve with crackers, or hot biscuits, or hot buttered cornbread. Sprinkle some grated Parmesan cheese over the top and ENJOY! I eat this in the Winter Time and also all year round. Great source of Vitamin C with the cooked Tomato Sauce and of course, you get a serving of vegetables in 1 soup! Lots of Vitamins in this Soup and antioxidants! ♥
