Leave the floors alone! Please! And just say no to gray. If you want to lighten up the kitchen for your father, do you think the color of storm clouds will do that?
Make your life easier and get white cabinets. They're classic, they won't go out of style (that prison gray is sooo 2015 already), and will lighten the room. Replace the counters with a light quartz - since you don't have a lot of counters it won't be so expensive. Or a durable granite - one that isn't dark, like Alaska White granite for example. Install a single-bowl sink - a stainless one won't be too expensive (check out the Kraus brand), and will be durable so you won't have to worry about your dad chipping it if he drops something in the sink.
Will you be replacing appliances? A double-oven range like this reasonably-priced Whirlpool will work better for your father than having the range plus that big oven on the counter that he has now. Your father will likely want to use the small oven most of the time, but has the second oven when needed. GE makes this style range as well.
