Very good decision not to go with the grills. As others have pointed out, look at that combinations of exterior applications on actual homes, if possible. When in doubt, go with less and less busy. Don't allow the stone to compete with the roofing shingles.
Finally, do you not have a designer or architect assisting you in this home ?
Of the 2, I prefer the crescent peak, as it contains much longer pieces of stone, appropriate for the size of your home.
As redsilver mentioned, be careful of the mortar application. You need to choose the right color and determine if you want no mortar showing (stacked stone look) or a the mortar to show.
