I think that might depend on the ambient temperature. I would, once it's thoroughly cooled, and then remove it to come to room temp. - maybe an hour before serving?

^Agree with Carol. It should be okay (tightly covered) sitting out until tomorrow if the room temp is cool. However, the fridge is a good bet, and do let it come to room temp before serving. Now I’m hungry for some!😀

If I were using it tomorrow I would refrigerate today because of the relatively high moisture content of the pineapple; in the worst scenario it might mold at room temp.

Wouldn't there be too much condensation if refridgerated, thereby affecting the texture of the cake?

I'd probably leave it out overnight if I were going to serve tomorrow, tightly covered, unless it was really hot and humid.

Unless they involve something like whipped cream, I never refrigerate baked cakes but I do cover loosely. It is highly unlikely a pineapple upside down cake - or any other - will mold overight!!

I refrigerate anything I bake with oil or eggs in it. Yes...refrigerate it.

If you refrigerate a cake make sure is is tight wrapped or covered. Cake gets stale very fast in a fridge.

I would never refridgerate a cake before the first serve, because it is much more likely to dry out then mold, assuming your home isn't too warm and humid. In high humidity a cake might melt long before it begins molding. Cakes in the summer are tricky!!

Store: Airtight: 1 day room temperature, 3 days refrigerated, 2 months frozen.
