Comments (44)My DH has been craving Cal-Mex food, so we've been hitting our fav taqueria a whole lot: shrimp quesadillas, carne asada nachos (lighter than most with queso fresco rather than melted Jack or Cheddar), chile verde plates. So it was my turn to pick, and since I was tired of Cal-Mex, I chose Eritrean (similar to Ethiopian). We started with beef samosas, lovely little deep-fried wraps with a super-spicy chile sauce that could blow the top of your head off! Gommen (braised collards), zigne (spicy beef cubes in red gravy), bamiya (stewed sliced okra--yum!), alitcha dinish (potatoes & carrots in turmeric gravy), birsin yemisir wot (stewed red lentils), doro alicha (chicken yellow curry) -- colorful little piles atop freshly-made injera; the spongy, sourdough-like pancake that serves as both bread and flatware. All of this is "eat with your fingers", fun and messy. Comments (23)I grew up in Arizona, and we only knew of two kinds of shrimp. One came in cans, the other came from restaurants-via the freezer. Here are a couple of good uses for canned shrimp. Add it to potato soup. My mother made "chowder" using canned corn and shrimp. Her chowder was essentially, a thinner version of potato soupk. It had a milk-based broth flavored with fresh celery and onions. Everybody loved it, included my brother's vietnam buddy, who hated seafood. My mother also made a cold gazpacho-like soup that she called shrimp cocktail and served for a first course. It was tomato juice, a can of Veg-All, and canned shrimp seasoned with a little hot-sauce and served with fresh lemon. Canned shrimp added to a salad as suggested before, is wonderful. Serve it with fresh tomato wedges, saltine crackers and "Louie" style dressing. (Similar to Thousand Island, I'm sure you could find an easy version on the internet. We grew up with much less than people have today, but my mother was a great cook who always made the most of what we had. One last thing . . for those who would give undesirable cans to the food bank . . remember that when people are having hard times they don't suddenly start craving peculiar food from cans with faded labels--anymore than they desire stained clothes or ratty furniture. Comments (42)Sometimes cravings: Chocolate - been known to eat semi-sweet baker's chocolate. Potato chips with bean dip Potatoes fried in bacon grease (nasty for the cardiovascular system. I substitute a baked potato for this one.) Polish sausage/Brautwurst - Not often, but very tasty when desired. Raw cabbage with a little salt and black pepper. Hamburger sandwich with a meaty double patty. Oranges and grapefruit - must refrain from grapefruit with a particular medication I am taking. It interferes with the timed release of the micro-capsules. Comments (52)Sloppy Joes. You know that yucky stuff that came out of a can. I have no idea why and I have never eaten since I was pregnant. But man did I crave that stuff. Made exDH go to grocery store and get me some. And he was not the most accommodating person (hence, the 'ex' part) so it was not easy to get him to go. I was also crazy tired in the first trimester with my first. So much so that when exDH and I were socialzing with my boss and his wife, he mentioned to exDH that maybe I should see a doctor because I've been so tired at work. Ha! Yep, sure I'll see the doctor. We all had a good laugh when I finally announced I was pregnant to my co-workers. I don't think I was as tired with my 2nd which is weird because I was 14 years older!...See More- 22 days ago
