Getting married at The Biltmore Los Angeles

We're getting married next June. It's been my dream to have the reception at The Biltmore ever since I can remember, and it's finally happening! I see it as the definition of elegance and a fairytale vibe. We checked the prices for other venues and compared; yes, this one is on the high end, but I was thinking about having outside catering so we can pull this off. And we knew we wanted this venue, so we've been saving for over a year already (plus both of our parents offered to participate as a wedding gift).

Anyway, here's where I could use your opinion. I love the old-style elegance of The Biltmore, love it, but I generally like eclectic style. So, I would like to include Mexican cuisine as one option, most of our families love it as much as we do, plus my fiancé actually proposed in our favorite Mexican restaurant. Would it be completely insane to serve tacos and have the tables decorated with colorful, a bit boho flower arrangements at The Biltmore? (*see the pictures to get an idea if you don't know this place; by the way, this is where we were looking up the venues to compare the prices) I mean, eclectic can be tricky to get right, and when you fail, it usually looks like a circus.

Should I put extra effort into finding a professional who can do this right, or should I just build around the venue and have a classic wedding? Maybe a ballroom does ask for salmon or something like that? It would still be beautiful and I would like it, I know.
