Layout Ideas for Small Galley Kitchen (Scandinavian Style)?

Hi all, I'm working on early design plans for a small 1960s galley kitchen.
The basic measurements are:
- Room length: 180" (15 ft)
- Room width: 94" (7 ft 10 in)
- Ceiling height: 91.75" (about 7 ft 8 in)
- One side has a load-bearing wall (stove side) and I’m considering partially opening it up - but we don't want to move it or the hood.
- I’m aiming for a Scandinavian-style look — clean, minimal, light wood cabinets, and a more open feeling.
Has anyone successfully made a galley kitchen feel more open without completely removing a load-bearing wall?
Would love any layout ideas, favorite features you added, or just general advice about opening up the space a little.
