Converting a coat closet to a pantry

Need help with what to do with this.
Measurements:
Hall Closet: Inside of closet is 90”
The the opening frame 71.5” wide, and framed sides are 83” high
Depth from back wall to inside the closet 17” at either side.
Depth from the back of the wall to sit flush with the opening is 22”
I don’t mind losing then sides that are in closed for a neater look, or even taking off the 12” over hang. My ceilings are 8 ft.

My kitchen is in the process of complete renovation and everything is pulled out or coming out. I just had the floors done (the subway tiles are the boxes stacked up for kitchen walls.) I knocked out a wall which was a pantry to move the fridge to that area and its created a nice space. I need this closet for food and storing kitchen appliances, Kitchen-Aide mixer, Instapot, food processor and food. I do not want the track doors that were previously on the closet, and came off track all the time, but also don’t know what would look good to cover that amount of space. The hallway is wide enough for regular doors.

This hallway connects the living room and the kitchen, and there is a guest bathroom on the opposite wall, so I’d like to have something that looks nice and has the same feel as my kitchen which will have black slab cabinets, white quartzite counter tops, subway tile back splash, stainless appliances and some wood accents.

I know I could add wood shelves, but I don’t really have the eye for making this type of thing look good. My budget will be around $3500 for this.
