wilting in frost tolerant plants

We had a hard freeze (~20F), and all of my frost-tolerant plants - beets, collards, chard, onions, are wilted. I vaguely remember someone saying that this is expected, as ice crystals form between the cells, and water gets pulled out of the cells onto the ice. In these plants, those crystals are not particularly damaging. When it warms up, the water returns to the leaves, and the plants will perk up again. Does anyone have a more cogent explanation?
