Smoke residue and staining wood furniture

I got a dining room set off Marketplace and didn’t realize until it was too late that it must have been in a smoking household for some length of time.

The chairs are being painted so I washed them with TSP, rinsed a ton of times, scuff sanded and have two coats of BIN shellac on them. I think they’ll be good to go.

I was planning to sand down the table to raw wood and re-stain using an oil-based stain and polyurethane. Does sanding down to raw wood deal with any lingering odours? And if anything lingering, will it be sealed in with the top coat?

For the underside of the table, I wasn’t planning to stain, but I was going to put a few coats of poly on it to seal in any smells.
