Marble Kitchen Countertops - Resin Coating?

I went to the stoneyard yesterday to pick out my kitchen countertops. I want to do natural stone. I was originally thinking a light-colored quartzite, but they didn't have a lot to choose from. The fabricator I'm working with then showed me a slab of marble that he swears is safe to use in kitchens because it has a particular scratch-resistant resin coating on it. He said the other slabs of marble they have do not have this, just this one certain color (which I happen to like). Has anyone heard of this? Is there really a resin coating that makes marble scratch and stain resistant?

I know some people choose to use marble in kitchens despite the risk of staining and scratching, and some people actually like the patina. But I really don't want a bunch of scratches and stains on my stone. We have small kids and do a lot of cooking, so I need to be sure this wouldn't be a mistake.
