Seeking advice for SoCal backyard fenceline - which Pittosporum?

Hello!

We just cleared out our fence line in our Zone 10 backyard (located in Costa Mesa, CA) and I'm hoping for advice on pros/cons and experiences of planting one of these 3 along the fence line with the goal of adding greenery and covering our ugly fence.

I am looking for a plant that will:

- grow to somewhat cover the fence

- still have some movement & isn't super dense like many hedges I see around here

- that looks nice in a natural/unshaped form (really dislike the chunky rectangular hedge look)

- is relatively low water and drought tolerant

We would also plant a grass similar to the inspo pic below.

Secondary question: how far apart would you suggest planting these? I had guessed we may need 8-10 along this white fence line.
