Help me plan my mudroom layout/storage

last month

We are renovating our home and will end up with a main mudroom, a storage / dog wash room, a two-car garage and a one-car garage. We are a busy family of 5 with 3 kids under 12 who are have lots of sports and activities so this new mudroom and extra garage space will instantly improve the quality of our lives. We live in MD so we experience all seasons (including snow the last 3 weeks!?).

My hope is to use the New Mudroom as coat/shoe/book bag/soccer bag/dance bag/basketball bag/ALL THE BAG storage. I'd like to line the perimeter as much as possible with benches and hooks, some shelves for gloves, hats, etc. My kids will not use drawers, so I'm thinking large baskets or shoe slot cabinet inserts or a mix of both. Only the stuff we need to get in and out the door every day. We do have a central vac system in the corner that we have to avoid. We also have 3 doors (they all swing into the mudroom, the door to 1-car garage is wrong). This room used to be a garage so the ceilings are very tall.

The dog wash /storage room is proving to be tricky. My goal is for this room to include our dog sink (40"x24"), dog dryer/shampoo/combs etc., a doggie door to the deck outside (underneath the window), an upright freezer, a counter depth fridge/freezer (TBD, will likely select smaller to fit the room better), 2 recycling bins, cleaning supplies (including our central vac hose) and extra paper towels/supplies. It would also be GREAT if we could have enough floor space around the dog sink to use a grooming table (they tend to be 36" x 24"). If we take out the current broom closet, we need to replace the entire flooring (not a huge deal but we could totally keep the tile we have now as it's in perfect shape even after 20 years). Where the dog sink is currently located are old washer/dryer lines (we converted this room from laundry to mudroom 7 years ago).

My question is how can I lay out these rooms to maximize the space while not blowing our budget? Should we remove the broom closet completely? Can we move the sink to the right wall? I have loved and used IKEA for our walk-in closet and kitchen so I'm a huge fan of using their stuff here if it makes sense. Thanks in advance.
