Comments (101)Neely, your plating is so much more appetizing than the recipe card. I think of jerk seasoning dark like yours. So busy Annie. In the kitchen and out on the farm. What a cutie calf. I have forgotten about potato chips for a crust. I keep wanting to try pork rinds but i . always eat them before i get the chance. A local empanada shop (hand pies) sweet and savory, has one that uses a cornmeal crust. A bit thick for my likes, but i bet a fine cornmeal or mixed with another GF flour would work in a tortilla press. DH thought my strawberries were weeds. But my blueberries are big shrubs and the new ones i put in last year are looking good, (and well marked) For some reason i've been avoiding anything fussy, rolly, stuffed, pleated. Comments (49)Yesterday I made a big batch of my 'taco' filling - which is ground beef, onions, peppers, garlic, tomatoes, corn & beans, seasoned with cumin, chipotle, black pepper, smoked salt and oregano - and I always add a cup or so of finely grated carrots too. Along with a basic green salad of lettuce, tomatoes, cukes, green onion and fresh basil. That will be dinner for a few days. I make a taco salad with crushed chips and salsa on top of the taco filling and some American cheese. Comments (102)Simple stuff tonight Salmon lightly cooked in mirin-sake-soy-sugar (teriyaki) Oysters from Waluppa (sp) Bay Scallops coated in flour with onion and garlic and mushroom powder, sauteed Beef short ribs, I tried first cooking then at 350F with full steam for 10 min, then did a sort of rub, let sit to dry, then broiled at 425F no steam 3 minutes.
