Replacing a 60/40 undermount sink with a single bowl.

I have a 20 year old 60/40 sink. I have to replace the faucet so figured maybe replacing the old sink as well. I would like to go with Blanco Silgranit Cinder color (or something similar). I would like to go from a 2 Bowl to a Single Bowl (or a low profile if that is only option). I'd prefer undermount as I have it now, but can do drop-in if best option. I'd prefer to not alter the granite at all but can, however, I don't have a lot of room to the backsplash (2 1/2" on left side - 5 1/4" on right side where existing faucets are). I'm guess I need to be concerned about how the main faucet hole lines up? I would go down to a single faucet with spray but also keep the drinking water faucet (far right). Plumbing distributor gave me a couple of sinks to try but said for plumber to confirm. Plumber said Distributor should confirm. 2nd plumber said to talk to granite guy. Granite company said talk to Plubming distributor. I'm going in circles. I don't care if there is a lip from the dual mount sink on the back side showing to fill up the granite hole on the left side. Can use as a shelf/lip. I've included specification pictures of 4 options on left side. My current sink 510-888 Blanco Silgranit Kitchen Sink is repeated on right side.
