Costco rotisserie chickens are a pretty good size. In another thread. several people described how they made up to three meals from one Costco chicken. This is a thread where everyone can describe what they do with Costco chicken leftovers, or any chicken leftovers for that matter, to give us ideas. Some of the ideas might work for leftover turkey as well, because leftover turkey time is coming up.
One of my fanovite ideas for leftover rotisserie chicken is to make soft chicken tacos. I have commercial taco chicken seasoning packets, and to the shredded chicken add grated cheese, lettuce, onion and sour cream. Sometimes I add tomatoes.
