What to plant in a former bamboo grove?

For years we had a large stand of bamboo along our property edge here in Memphis (Zone 8) but after a couple of winters with multiple days of sub-freezing temps, the bamboo has all died out. Slowly my wife and I have been cutting down the tall (30-40 ft) stalks, sawing them into 8-ft lengths and hauling them to the curb for pickup. As we've been clearing out the bamboo, the area is starting to become overgrown with weeds. The ground is still too thick with bamboo roots/runners and would be impossible for me to till. What are plants you suggest that would grow in this sunny area that would not require a lot of ground work? I bought several pots of pampas grass on clearance at Lowe's ($4 each!) and looking for other suggestions. Open to shrubs, preferably evergreen since the bamboo once provided privacy from the neighboring in-fill development. Also ground cover, etc. Thanks in advance for your ideas.
