When should I plant the onion bulb for getting my own seeds?

I'd like to get my own onion seeds. My garden is in zone 7b , GA. If I plant it now, and it starts blooming in winter, who will pollinate the flowers? Is onion smart enough to wait till spring?Will wind or shaking do the pollination?

I would assume a year after the bulbs form. I think the bulb has to be exposed to cold temperatures to trigger vegetative senescence and eventually a flower spike. Life cycle on onions is two years. I believe that once the bulbs have formed and the leaves start to die, you cut them all back. When the onion sprouts the following spring, it will shoot a flower spike.
