Comments (7)Annie, it did say 10 min. ? I have to confess, that I often do a search and copy and paste the recipes from places I remember having them posted... I don't have time to do all this retyping, especially during canning season. You are right, one site does say 10 min. ! Will have to check my own recipe... you all know how crazy I get this time of year. Well, worse than ususal, anyway, LOL ! OK, my own recipe DOES say 10 min. The 15 min. I found again, on another site, posted by someone else. Sooo, I guess the canning craziness has hit me already. Send the guys in the white aprons for me ! That is really a weird recipe to me. I would open a jar of zucchini relish and then a jar of salsa, mix them, and taste to see if I like it. It seems SO sweet. Sort of reminds me of that red hamburger relish you buy in the store, not salsa. Yes, Veggiecanner, it is truly amazing what you will still find people doing when it comes to food preservation and food safety in general. And then, people say they have "the flu" when often it is forms of food poisoning due to their unsafe storage of homecooked foods, leaving foods unrefrigerated. I have heard some really strange things, I tell you. Try Annie's salsa if you haven't. I like it really well. Everyone else does, too. Then, if you don't like it, send it to me ! Ha ha. Comments (43)Ladies at DH's church have been making zucchini relish for decades, I just got a look at the recipe. I was concerned that it was too dense, not enough vinegar but it is almost identical to Linda Lou's. The only thing is, it calls for 4C of onion, not 3, and also 1 Tbsp of cornstarch similar to beklyn's. Vinegar, zucchini and sugar measurements are the same as the 2 recipes above. Just checking - should DH suggest to the pastor that the cornstarch be omitted and processing time be increased to 15 min (instead of the "5 or 10 minutes" in the church cookbook)? What exactly does cornstarch do in canning? I *think* he'd be able to suggest that the processing time be adjusted to modern guidelines, but this is a sensitive issue to the older ladies who have been making and selling this relish forever (actually I was relieved to finally see the recipe and find it's not that far off from what I assume is an approved recipe - Ball Complete recipe actually uses more zukes for 5 pints!)......See MoreWould this No Salt Added Pickle Recipe Work?
Comments (1)I would prefer more vinegar - double it. Granted the ratio of water to vinegar is a little better than the 50/50 minimum allowed but it doesn't take into account all the water in the cukes themselves plus the onions. I would also cook the seasoned brine first rather than just using it raw. That way the brine has less of a chance of turning cloudy on you and they would keep longer in the fridge - couple of weeks. Comments (2)I can't think of any reason why you couldn't substitute zucchini for the cucumbers in Ellie Topp's recipe. Thet are often subbed for each other in pickling recipes and are actually a bit less risky simply because they contain less water to dilute the vinegar than cucumbers do. In addition, this is a straight undiluted vinegar recipe with additional lemon juice which is even more acidic than vinegar.
