Floor transitions in a 1940's bungalow.

We are getting ready to remodel our kitchen and I have decided to change the kitchen flooring. It appears to have layers of flooring under the present tile. There are transitions from the newer flooring to the original 1940s wood flooring. I am wondering if anyone knows why there is such a steep transition and why the previous owners maybe chose not to remove the flooring before placing the tile? Is there something I am missing? At this time we are intending on trying to remove multiple layers.
