Kitchen cabinet, island and peninsula layout help please

We are remodeling a 23 year old home in AZ in a 45 and up active adult retirement community. We spend the winters there and are working on the kitchen cabinet design. Should we cover the fixed window and go with all of the cabinets to the 9' ceiling? We are tall and can reach high cabinets. The window isn't centered and isn't the same level as the other one. Those high narrow windows are common in the neighborhood and we have them in other rooms too (laundry and primary bath). It is common to just cover them up. The room is bright and open. The wall in the kitchen faces a neighbors house, so we wouldn't make a lower and larger window as it would also let in too much summer heat. The current view from the kitchen sink is the golf course. The island is 39" and has 39' clearance. We will spend a lot of time outside entertaining on the patio and bought this house for the entertaining space in the great room. We do not need 2 eating areas. We are not wine drinkers, but liked the look of the beverage column fridge but do not need it. Open to ideas on color and style too. The new flooring will be a large format 24x48 light color tile. The window coverings and lighting in the listing photos will also be gone. Hopefully, I got the right details and floor plan info. TY!
