Christmas Dinner in under 1 Hr

I will be arriving at my friend's house Christmas evening ... it's a full plane so wouldn't expect to be out of the airport before 6pm. I have checked out local restaurants (and will continue to) but I am thinking a nice but low prep/quick meal at home would be nicest.. we can take our time, catch up, etc.

What would you prepare that has minimal prep, cooks in <60 min.

No need for traditional .. but should be festive and not too heavy or rich?

Also.. unlikely we can get nice scallops (my first choice)

So far I am considering ONE of the following:

  • Spinach stuffed shells
  • Spinach Ravioli in pink sauce *
  • Small roasted beef tenderloin *
  • Filet mignon (not my fav but he will love)

* indicates the two I am leaning towards

Also, I am not big on desserts but he is-- i was thinking affogato and shortbread. Other suggestions welcome!!
