Chef's drawer oils next to range?

We think this is a great idea. However, we are not sure if having oils and vinaigrettes and such next to a heated range will spoil any of the items in the chef drawer? We don't believe any heat or very small amount of heat would be coming through the cabinet. Or are we just stupidly over thinking this???

Are there any cons to having a Chef's drawer?

I have a bottle of olive oil on the counter next to the range and it's fine. However, I would hate a pull-out for stuff like that -- would much rather have a regular upper cabinet with shelves than a pullout. I say upper because just reach up and it's all right there.

Back up supplies are kept in the reach-in pantry. However, those oils used daily in our working kitchen, are kept on the counter next to the rangetop.

Like today’s paper towel thread…it’s a kitchen, not a showroom. Some items are expected to be on the counters (visible), and convenient.

The resurrection of this thread is perfect timing. I'm planning on a six burner 36 inch Culinarian range, and had been up in the air about an additional oven. DW and I were in an appliance store in Tampa yesterday, and since we don't do a tremendous amount of baking, the Miele Speed Oven and a warming drawer seem to be a good complement for us to the large gas oven of the range (whether an additional full size wall oven, in addition or instead of the Speed Oven, would be better or resale purposes at some point down the road is another matter). In comparing the two, my bride much preferred the more conventional controls of the Chef series SO. Even though she's still likely to want a dedicated microwave oven (doesn't trust that the SO will do that and hold up over time), she didn't like having to push the Master Chef menu buttons through about three levels to get to the point where she could enter the numbers for a straight microwave task. OTOH, the combination of different modes one can use is so staggering to an untutored barbarian such as me that I have to wonder whether the Master Chef would ultimately show me how to get that much more value/use from the SO. For example, DW likes to take a frozen filet of salmon and nuke it. To me, it's hot and edible, but that's about all I can say for it. I can imagine the Master Chef first defrosting, then roasting that same block of salmon in a much more appealing fashion than straight nuking. I just wonder how many pieces of fish I'd ruin if experimenting with the Chef oven before breaking the code for times and modes of cooking. :-) I grill 90% of the fish I prepare (gas grill or over hardwood charcoal on the back porch), so the oven roasting would definitely be a new experience for me.

Hi again, well to tell the truth, it has limited the amount of cooking (using the oven) a lot. I noticed way later on, after the fact, that I was trying not to use the oven, without even knowing that I was doing that. I think this range would be great for someone that has a larger kitchen, with a real vent hood. Mine is a recirculating micro hood vent, which we all know doesn't work for the smoke, or heat. One appliance I was very happy with is my New GE Profile, french door, bottom slide out freezer, water and ice on the door) Refrigerator. Stainless Steel. Knock on wood,(knock, knock) I have had no problems, and its wonderful. Do you all have any suggestions where to look for a cousin of or something like the stove that I had. I have looked up vintage stoves, but most of them are very large, and very expensive. Any ideas?

Ranges with ovens in the lower drawer

I'm enjoying my Miele speed oven for most little things, so I have less experience with either of my E'lux range ovens than you do. My guess is this range's lower oven is really best for warming plates. Small or flat things may be this oven's forte. So I wonder if it might work well cooking pizza (?), assuming 450 degrees is hot enough and a good pizza stone could even out the uneven heating you've noticed. Maybe baking potatoes, too, since they're small -- as long as you know to avoid hot & cold spots (or can use the stone). A stone may help even things out during slow cooking as well, I suppose. Clearly its less good for things you have to watch or fiddle with (e.g., turn), since there's no window and opening the door exacerbates temperature vacillations. I'd probably rely on the upper E'lux oven for baking / roasting / convectioning most things, and not try to coax the little guy to do stuff that's beyond its ken -- notwithstanding E'lux's optimistic (and misleading) photo of those pies. You'll like it better if you let it handle what its good at. Really happy to hear they may have actually fixed the multiple and long-standing problems you've had for months now with this range -- and before Christmas (!), since earlier it sounded like this fix wasn't going to be till after the holidays. I sure hope these repairs stand the test of time for you.

Do spices denature in a pullout next to range?

Sweeby, where do you find spices in test tubes, or do you keep refilling them (too lazy here)? I have started to buy the half bottles when they are available unless it is a spice I use frequently. I don't find many spices available whole locally. Nutmeg and cinnamon, some seeds, but what else? Many of what I use are dried herbs and I don't think larger pieces last any longer than the smaller. parsley, oregano, thyme, Rosemary, etc. I am struggling with this myself. My old spice storage was a lazy susan in the corner upper cabinet that I now have replaced with a lighted glass front cabinet. I can put a pullout behind the spindle next to my sink or use a regular shelf in an upper cabinet that will make it hard to find the right spices - maybe use one of those stair-type things to raise the ones in back. An upper pullout might or might not work - They are 3" wide and I JUST have 3", but there is a little lip on the adjacent cabinet that may or may not interfer. Considering the high return and restock fees to return something to Rev-a-shelf, I have been reluctant to order one to see, but that might be the best alternative. By the way, I am sympathetic to the 15 yr old spice thing. But in reality, if 15 yr old spices are OK with you, the moderate increased temperature next to a modern stove probably won't matter to you, either. As you can see, I am confronting similar issues, and don't have a solution for you. I will read the posts to see what other suggestions come up, though, and let you know if I see anything that might help. Sue

My current range gets a little warm on the sides and so this might not be ideal, but if you use the oils up quickly enough, I would not mind that setup. I like the visibility.

If you get this, be sure it is a size that can be used for other things (baking sheets?) if it doesn't work out. Storage that is very specialized is a bummer when you decide you want to use it for something else.

I have always kept my oils, vinegars, and large container spices in just such a pullout. That’s how I cook. That’s were my hands need them to be when I’m flying fast. Never had anything spoill but YMMV. Currently I have a Bosch induction top, so no oven. But I kept them in the same place when I had a full range. That said, I go through oils and such at a pretty good clip.

Those are useless, in my opinion. I had one put into a kitchen reno, and it was the one thing I regretted. Not only do you not want spices next to a heat source (but not the end of the world), those drawers make things difficult to find things because of the low vantage point. Additionally, if it's not perfectly filled with no space between anything, all the bottles and jars will rattle every time you move the drawer in or out.

We have a 15" pull out cabinet (insert from rev a shelf) that we store oil and vinegar in. I put it one cabinet away from the range to avoid excess heat but its still close at hand

All of those bottles, except the ones you make at home, have already gone through a wide range of temperatures and temperature changes before you pulled them from your reusable bag and placed them in the convenient pull out. Did they all arrive spoiled or useless? No. That said, it really depends on how long it takes you to use the contents of each and how hot it really gets. You could always fashion some type of extra insulated divider that would add an extra barrier for further piece of mind (a piece of felt cut and stapled or cut open an insulated bag to size)
