Countertop color and sink choice

I’m in the planning stage of my kitchen remodel and am trying to decide on a countertop. I have a very old home (built in 1870.) My cabinets will shaker style with white uppers and teal lowers.

I started out thinking I wanted a subtle, soft white quartz with faint veining. I am attracted to the idea of no/low maintenance. Also, all the white granites I saw were too ’busy’ or had too much color contrast for my taste.

However, I’m wondering if black might be a good option? Maybe black, honed granite?

I‘m also torn about my sink choice. I want a single bowl, apron front style. Should I stick with white or go with copper? I do love copper but will it pose a headache maintenance-wise?

I’ve included a design rendering of one side of my kitchen.

I know that either of my choices for each will look good but I still appreciate the Houzz community and their opinions and insights
