Had some time on my lunch to throw something together for you. The peninsula top is 92 x 51 - the absolute max you could do (if the dimensions provided are accurate ) - 24 " deep cabinets backed by 12 " deep cabinets. Keep in mind how close this will put seating next to the slider. The walkway between the stove and sink is 48" . You can always get rid of the cabinets on the backside of the peninsula and do a wider walkway and bigger overhang and move it away from the door.

I would strongly suggest a pocket door between the kitchen and mudroom. That will stop from having conflicting swinging doors.

I would also consider stackable w/d at the far end so you can take advantage of more storage and folding areas.
