Best finish for wood countertop?

I am finishing a new beech butcher block, to be used as a desktop in our kitchen. We already have a beech counter finished in Waterlox--chose that after much research many years ago. I've been happy with that finish, but it was a pain to apply and I'm not sure a desk necessarily needs as much protection. Any recommendations of other products to consider (especially anything newer that might not have been on our radar when we did the last project), or should I just stick with Waterlox? (We are in a state with VOC restrictions so would be working with low- or no-VOC finishes.) Thanks!
