I discovered a nice ”sweet treat” last night after dinner. I poured a can of pineapple seltzer (Waterloo brand, I think) over ice, and added about 1/3 of a small can of pineapple juice (those little cans that come in a 6 pack). So that is often a version of my favorite cocktail (add vodka) but without the booze, it‘s about 20 calories of sweetness. With a square of dark chocolate, it’s a great dessert! It’s not revolutionary but I am thinking it will be a good option for me when craving something after dinner. In the winter, herbal fruity tea often scratches that itch, but this can be my summer version. Plenty of ways to vary the flavors, too.

First post-vacay dinner last night: roasted chicken and veggies (asparagus, zucchini, onion, pepper, cherry tomato) on a sheet pan with San Juan spice mix. Tonight will be a different version of basically the same thing: same chicken but with a big salad. Tomorrow, will have to be something other than chicken LOL. Our menu is a bit limited these days bc DD got food poisoning from fish in NOLA in April and still won’t even look at fish. We realized on vacation that she is still really traumatized from that. ☹️ But she is going to visit BF soon and DH and I can go crazy with fish while she’s gone, woohoo.
