Kitchen living room combo flooring question

Hi,

We have a kitchen an living room combo. we have 2/3rd kitchen and dining area together and 1/3 rd living room area. We have tiles in kichen and dining area and entance and carpet in the living room and all the bedrooms and hall ways and stairs.

We are planning to upgrade flooring throughout the house.

We thought we will put luxury vinyl plank everywhere because it's easy to maintain.

But when we did our research found that replacing tile and carpet will leave big space under the door frame because Vinyl is far thinner than carpet. Is this true? I read people saying after they did vinyl floors they weren't happy with the big gaps under the door rims. We have 7 doors in the house. It is difficult to close the gap (That's what I read).
