Agreed, I'd take the money you might put into customizations and spend it on professionally designed landscaping.

The stone veneer till 1/3rd is standard - I really can't delete it. More stone veneer is an upgrade. My options really are more stone veneer (only front), shakes, brown gutters n trim, window trim/shutters or eyebrows. My husband works landscaping as a side job so we can get that done easily and at affordable rates.

No it wouldn't. It would look like fake stuck on stone. If you want stone, then you do it so it goes around all sides of the house so it looks like it is part of the foundation. And you don't have it go halfway up so it looks like grandpa's pants pulled up too high.
