Miele Combi steam oven water source

We have a special need child and was told by the doctor to make sure only use very clean filter water for drinks and foods. We are thinking of getting a combi steam oven but was told to use tap water which may contain impurities. Does the impurities of the tap water stay inside the water boiler and not evaporate with the steam to touch the food cavities?

I heard conflicts about using reverse osmosis water as the manual states not to use it but Miele agent told me as long as it contains some minerals (our is 50 ppm), it ok. I know water from our reverse osmosis unit is a bit acidic. I'm wondering if I can use our existing filtered water from the reverse osmosis or I have to find a different water source? Thank you.
