induction cooktop with temperature control

I mostly cook on a Breville ControlFreak. Are there any 36” induction cooktops that can compete with that? I want something that I can set to a certain level (whether a specific temperature or something semantic like “simmer”) and then stay there.

The GE Profile PHP9036DTBB 36" model does what you want. Video. Also 30" models: PHP7030DTBB, PHP9030STSS. At Best Buy, Home Depot, etc.

The Electrolux ECCI3668AS claims to maintain constant temperatures but doesn't let you set the value. At 8", its largest element is rather of small.

@wdccruise The GE Profile (and Cafe) do have their "Precision Temperature Control" but it requires a special pan (or an attachable sensor).

The Electrolux one I wasn't aware of. Seems promising "Unlike other induction cooktops, our technology uses a sensor to continuously measure pan temperature".

I have the 30” GE Profile induction cooktop that was installed just four months ago. Yesterday, it mysteriously froze up. None of the burner controls would activate. Even though the control lock was unlit (supposedly indicating the cooktop was ”unlocked”), we were unable to get the burners to turn on. I discovered this thread and subsequently tried the ”palm method” as well as the ”forearm technique” all to no avail. Frustrated, I then flipped the breaker off and left it off for a couple hours. When I turned the breaker back on and checked….voila! The cooktop appears to have reset itself and is now functioning normally. We’re happy campers once again. I guess the moral of the story is: Check online and find your issue and then exhaust the remedies before calling for service. Cheers all!!

I agree with dan1888 that a slightly warped carbon steel skillet will mostly work in the sense that perfect contact is not required for induction. The distances are not great enough to keep a warped pan from working. But the pan will be sitting on a ceramic smoothtop surface. Depending on how the pan warped, an uneven base might make make the pan prone to spinning, sliding around etc. That difficulty can be fixed with silicon or paper spacers (as described previously by Kaseki and others above) or even with a dish towel under the pan. Of course, those strategies do limit how hot you make the pan. Very high heats (say 500°F) may scorch or ignite or melt a spacer. However, depending on how warped the pan base and how "perfect" you need things to turn out, you might find the warp causes uneven pooling of oil and fats, pancake batters. omelettes. and etc. This will be true on any cooking surface as well as with oven use.

Wolf Induction Cooktop vs. Wolf Gas Cooktop??

I saw the newest Wolf induction cooktop and I was impressed with its versatility. Specifically, I am speaking of model CI365T/S. I really like the burner layout with the four burners that can be bridged on one side and a larger oval burner on the other side. It offers what seems to be the most flexible layout. There are other induction cooktops with "flexible" zones but they are in a layout that is less versatile, most commonly with a large round hob in the center and the flexible zones on either side. My building does not have gas so when I upgrade, I will be looking at induction. As of now, I think the Wolf is my favorite but I am a year or two out and something new may change my thinking.

W.r.t. subject 1: I personally am not aware of any cooktop sized (30 - 36 inch) units with temperature control via an external probe. It is certainly within the realm of electronics design to build such a unit, although I can imagine considerable algorithmic complexity to handle all sizes and magnetic susceptibilities of potential pans/contents, as well as dealing with what happens in boil-overs, probe falling out of pan, etc., and this tuned for each hob so facilitated. At least the poles of the induction circuit should be well away from those of the cooked mass thermal time constant -- making control stability easier to manage in normal operation. Perhaps a tour through the web site theinductionsite.com would provide more insight about what is available. An immersion thermometer and cook control of power setting might do for the intended cooking project. The OP should keep in mind that even high-end appliances have to meet a reasonable price point so expensive bells and whistles tend to be avoided until someone finds a "fool-proof" inexpensive means of adding them. W.r.t. subject 2: All residential built-in cooktop induction units of which I am aware work on 240 Vac and (with some loss in available power) a 208 Vac leg of three-phase power. Cooktek products might be investigated to see if there are any operating at other voltages (not likely to be available in residential domiciles). W.r.t. subject 3: These exist. The GE Profile PHP9036DTBB is CR's top-rated 36" induction cooktop so I'd probably go with it anyway. It's low-heat performance -- "reflects how well the lowest-powered element...kept a low temperature as for melting chocolate and how the most powerful element, set to low, held tomato sauce below a boil" -- was judged excellent. The Electrolux has only one control for all elements while the Profile has a control for each element. The latter is much better, in my opinion.

Actually, I prefer knob controls, how they're arrayed across the cooktop, and the power indicators just above each control of the Frigidaire Professional FPIC3677RF whose low-heat performance was equal to that of the Profile. (I have an LG induction range with knobs.)

Bosch and Thermador have some models with temp control but it appears to be limited to only 4 or 5 non-specific levels. Doesn’t seem to be a very popular feature as Bosch has had it for years and I’ve maybe seen one brief discussion about someone using it.

GE looks like the best option but you seem to be limited to the 1 Hestan smart pan and 2 smart pots.
