I prefer a stool with a back, if the stools are going to be regularly used. Much more comfortable than backless. If the stools are just occasional, a backless stool takes up less space and tucks neatly away under the counter.

I have a low back ones in my kitchen, low enough that I don't see the top past the countertop. I have backless downstairs since kids will be on and off all the time, and the stools don't have to face a certain way...easy to hop on from any direction.

I think both can work. The first ones I bought were super sturdy and had backs; our kids were toddlers and we didn't want them tipping over. We recently bought new ones that are backless and swivel. I like them because they can totally tuck under the island. I was a little concerned about them being backless but it hasn't been an issue at all.

I think swivel seats are nice because you don’t have to pull the stools in or out much.
