Comments (40)Just catching up with this thread. I am in the same boat as Mtn. Incredibly down compared to normal. When all the nonsense in life started, wise old me thought, This is all going to pass soon. Then Covid came, Science will win, I thought. And now, well the problems keep piling up, and science is in a stalemate with the virus. The economy is doing what its doing, which will hurt many people and affect politics. Gun violence, like teen suicides, appears to be contageous. My very deep reserve of optimism is running low. And my response has been pathetic. I just had a slice of Basque cheesecake for lunch (I didn't buy or make it, DS2 is home and he likes the kitchen, darn it. I call him, The destroyer of my good intentions.) Comments (51)Late to the party. My weight has been in flux this week. Started the week out 1lb up but now that it's Friday I'm 1lb down, so hopefully I'm either unchanged or 1lb down overall. Trying to stay strong during the weekdays, having healthy meals and avoiding any alcohol. Though to be honest, this has been the kind of week that makes me want to have a cocktail pretty badly. I have been great with cardio this week. Swimming or running every single morning and trying to push myself during the workouts. I am really struggling to find the time to prioritize lifting weights. I've only gotten 2 lifts in this week and I should be at 4. I've been really sore from swimming and running and that's probably impacting my motivation to do it. Had some really exciting non-scale victories this week. My favorite smallest size jeans from 8 years ago fit again! I was not sure I would ever fit into them again but they fit. And every single pair of older shorts fits again too! It feels great to be able to grab some old favorites out of the closet and wear them. Then I had two separate people tell me that I looked great. I know I shouldn't be worried about what others think, but it was nice to feel like finally someone other than myself could see the progress. Comments (34)Thank you all-- I had a lovely couple of days relaxing and visiting with mom and sister. All the local family stopped over Wed evening ... there were lots of laughs and a table full of nibbles and treats. I did not have any of the desserts/sweets but I did nibble more than I should have and had a number of cocktails over the stay. I was good yesterday but am to go out to brunch and to taste cakes today. I am not all that invested in getting the perfect cake selection-- I know all will be good so I think I'll leave it to my niece to select the cake/flavor. I should be able to make good brunch choices based on the menu. I have been pretty busy and active but no conscious exercise. I am going to spend some more time cleaning the basement this weekend to get my exercise area ready to go. I don't spend much time there (clearly lol) so it never gets my focus when cleaning-- so the amount of dust and spider webs is embarrassing. It shouldn't take long to cleanup though and I will keep it up after this. I was up 2lb yesterday but I am certain it was a temp reaction to the foods and alcohol consumed. I will weigh in tomorrow and cross fingers that I am still down 1 lb from last week. The good news is the actual party next week shouldn't provide the same food challenges-- as there will be good options for me. Comments (29)Tonight's dinner was a new one for us, from a magazine cookbook I bought called "Eat to Beat Inflammation" by Better Homes and Gardens. Note: my local grocery almost never has escarole so I made this with baby spinach and chard. You could also use bok choy and just sprinkle dried fennel on it. Or sub two stalks of celery sprinkled with fennel which is what I often do since fennel can be pricey out of season. I also added about 2/3 pre cooked brown rice at the end to mix with the spinach. I special ordered some Lundberg short grain brown rice and we love it. Ingredients: 2 boneless pork chops 1/4 tsp kosher salt 1/4 tsp freshly cracker pepper (Note, I used a steak seasoning that had dried garlic along with the pepper) 2 TBLSP olive oil 1 head escarole, 12 oz which is 4 packed cups. Roughly chop 1 medium fennel bulb (that's too much. I didn't have the bulb part, had already used that so I sauteed the chopped up tops along with some of the leaves. About half were too wilted.) 2 TBLSP shallot minced (2 small shallots or one large) 1 TBLSP white wine vinegar 1/2 cup water (I used chicken broth) 1 TBLSP Dijon mustard Start by sauteeing the fennel and the shallot in a braising pan with the olive oil. I had to add a few splashes of chicken broth towards the end because the shallot was browning too fast. When they are about 2/3 done, add the seasoned pork chops. to the middle of the pan. Cook for 3 min. on medium high, with the cover on. (This is where I had to add some chicken broth to prevent the shallots from scorching) Meanwhile, combine the dressing ingredients (water or chicken broth, vinegar and mustard) Flip the pork chops after three minutes. They should be nicely browned. Add the chopped greens around the edge of the pan and over the flipped chops, and pour the dressing over the spinach. Cover and sautee for about three more minutes. A little less if your chops are thin. Maybe two. At this point, my spinach wasn't quite wilted enough for my taste so I took out the pork chops and set them aside temporarily on a small plate. I added some short grain rice I already had cooked (~2/3 cup) and sauteed the mixture for about a minute more. Popped the pork chops on top of the mixture to take to the table. Served it in a pasta bowl. Very good and filling, although we had a tiche of left over potato salad to go with it. This would pair well with roasted veggies particularly some type of squash. Or corn on the cob or some french bread for sopping up the juices at the bottom of the bowl. Of course this is if you aren't carb averse. If you are, then more greens and no rice.
