renovating a 1940’s small bathtub

My research is extensive and I enjoy being my own designer and contractor. Come to final choices hard. I have three plumbing bids, chosen the demo person who has a tiler and carpenter and contractor interviewed them. Have my electrician, plaster and painter.
I am removing the tub replacing with shower need help choosing best dish pan the plumbers have the tiler install pref the plumber to do, all no.
Don’t like lost of grout thus porcelain marble like tiles or panels.
Have an accent tile in herringbone I love but too expensive except for a strip or back splash. Like floating shelves except for 28” slab with a vessel sink and one under would use teak but will need to continuously treat. Pref a porcelain or marble floating shelf can’t find? Toilet and door problem. Not enough wall space for recessed door don’t like folding doors look cheap?
Toilet prefer tankless nothing in a 10” rough in.
