I'll try to get a better picture after work. But really, you'd want to go take a look at the tile in person at HD. The overall coloring is white and gray, but there are plenty of other colors in there, as well. Ivory, brown, even some red and blue. About 60% of the marble is split-face, the rest are polished. I'm guessing the max depth variance to be about a 1/16" The overall surface is quite rough, so I would not want it near a stove where it could get spattered with grease. I did manage to splash Au Jus from Italian Beefs all over it without it being sealed. It cleaned right up with a damp kitchen towel. Same thing with some blueberry smoothie. I'm guessing a soft bristled brush would work well for difficult spots and the occasional dusting (as I imagine it will capture a lot of dust).

When you remove the backsplash, take a sample of it with you to a tile store and find a good sales person who can help you through the selection process. Tile design can be very difficult as, unlike working with fabrics where the designer has done a lot of work for you, you are designing the colors, patterns, textures and sheens all yourself. It can be daunting without help if you're not big into design. You can go with a plain 4x4 beige but that is a really "safe" choice. Subway tile is not 'bold' but rather another standard choice. Both can be laid in different patterns for more interest, but the more complicated the pattern, the more expensive to install as it takes more tile and entails more cuts. There are also many other tile shapes (diamonds, mosaics, arabesque, etc.) And your choice of grout color can make the pattern more or less prominent, depending on how it blends or contrasts with the tile. But whatever you choose, make sure the tile and the counter colors blend nicely as they are right next to each other for the life of the kitchen. Below is an example of the same tile laid in a different pattern over the cooktop. They make very beautiful and expensive tiles in glass and metals and natural stones including mosaics. To make a backsplash more interesting without blowing the budget, you can use a standard tile background and then add in fancy tiles as accents, or add a narrow stripe, maximizing the impact while minimizing the amount of expensive tile you need to buy. Important to keep in mind is the size and busy-ness of the counter. A simple backsplash works well with a busy counter and vice versa. What you don't want to do is go busy with both. Your counter looks to have a fair amount of pattern so to go with a plainer background tile with some accents that pick up the other colors in the counter would be a great option. You'll have shadowy corners with the window under the soffit and It's pretty tight to left of window , w sink butted so near stove and microwave....just stay w a white very simple , subway tile. Don't try to draw attention in any way. Hope there are under cab lights on the long side. It's nice granite...white tile will play it well / And that's enough. Floor mats for fun expression : color and or pattern if you desire.

Darn, I had a comment in and hit submit but it seems to have disappeared. I found some tile patterns that reminded me of the pattern in the wallpaper you have currently. I assume you like that pattern and it sounds like you aren't looking for the safe choice. Most of these are from Tilebar and come in many colours so you can find one that will work with your room, not necessarily the colour I'm posting, just the style of tile. This one appears to be a raised pattern. Different without screaming at you. Kind of a modified Chevron pattern, but look like leaves. This braided leaf pattern is so lovely. Another larger - this one is sometimes known as braided picket apparently. Seashell or fish scale pattern. I'd use a slightly contrasting grout to emphasize the pattern a little bit. It is a bit too plain with it all one colour. If you're going to use a pretty pattern in the layout, you want to see it IMO.
