Industry Standard on Granite Remodel?

Good day. I’m helping my stepmother with a remodel of her countertops. I’m on the West Coast and she is on the East Coast. The company that she has selected to do the install and to get the granite on her behalf says that she needs to pay for the entire project now despite the install not happening for another 8 weeks. While I can certainly understand that they would need the full price for the granite pieces —to pay the third-party supply company in order to lock in the two exact slabs that she has selected, —it seems strange to me that she would need to pay for the entire project now.

In my experience with other types of projects, it is much more common to hold some kind of retention amount which you pay upon completion of a satisfactory project.

Can anyone please weigh in on this with their experience?
