Comments (20)I was just here checking to see if anyone was still canning anything, since I canned beef broth today. I raised the heritage Blue Slate turkey that we had at Thanksgiving, along with the fingerling potatoes which store very well in the cellar. Pumpkin pie was made from home canned pumpkin and an appetizer of a savory cheesecake was topped with my Habanero Gold. Mulled cider from cider we pressed and I had in the freezer stayed warm in the crockpot. Christmas thumbprint cookies contained homecanned jam and the green beans were from my basement "store" and my stepson roasted another one of those turkeys. The guys all doused theirs with my home canned hot sauce. All the Christmas baking was done with eggs from the freezer too, and the pie was made with homecanned apple pie filling. Throughout the holidays we snacked on fresh tortilla chips and salsa that I had canned (Yes, I'm THAT Annie). Oh, I made the ricotta for the lemon ricotta pancakes too, as well as the yogurt. Enchiladas made with leftover turkey were topped with tomatillo sauce that I made and froze when the last of my tomatillos vines were threatened by frost. My kids are coming over tomorrow and we're having beef roulades, with the onions in the rolled beef coming from the root cellar and the beef from my barnyard, good organic grassfed beef, a Hereford/Highland cross. Sweet and sour kale from our bumper crop of greens this year, home canned green beans with bacon for the grandkids and the cheesecake will be topped with homecanned blueberry topping. Comments (21)The best coffee cake ever. I can get my husband to do anything if I make him this cake :-). The best thing is it freezes extremely well. In fact, DH says it's even better after being frozen. Vanilla Steusel Coffee Cake 3 cups all purpose flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1/4 teaspoon salt 1 1/2 cups softened butter 1 1/2 cups sugar 3 eggs 1 1/2 cups sour cream 1 1/2 teaspoons vanilla 3/4 cup firmly packed brown sugar 3/4 cups chopped nuts (I prefer walnuts in this) 1 1/2 teaspoons cinnamon 2 tablespoons vanilla mixed with 2 tablespoons water Preheat oven to 325. Butter 10 inch bundt cake pan. Sift together flour, baking powder, baking soda and salt, and set aside. Combine butter and sugar in large bowl and beat until fluffy. Add eggs one at a time, beating well after each addition. Blend in sour cream and vanilla. Gradually add sifted dry ingredients and beat well. Combine brown sugar, nuts and cinnamon in a separate bowl. Turn 1/3 of batter into the bundt cake pan. Sprinkle with 1/2 of the nut mixture. Repeat Add remaining batter and spoon diluted vanilla over top. Bake 60-70 minutes. Cool completely before removing from pan. Sometimes some of the cake sticks to the pan. Comments (26)Piper, I have read with interest your concern regarding your dishes. I can't imagine why anyone would have been rude or harsh on the cooking forum in answer to that concern. I like my dishes too and want to use them for holidays but I don't want them cracked, scratched, broken or abused. We are talking about adults . How could anyone use a knife and not know it is cutting through to China ( pardon the pun). That said, don't feel bad because you are concerned with your dishes being damaged. Ideefixe made the remark it isn' fine antique hand painted 200 yrs ago. I'm sure she didn't mean that rude or harsh, did you Idee. She was just saying it wasn't all that big of deal. Is that what you meant Idee. Well, I feel everything in my home is to be used and enjoyed but I work around my "good things" getting man handled or mauled. I would use my dinner plates as a charger (as someone else suggested) and find clear dinner plates . You can find clear that look very nice and you will still be able to see the beauty of your V&B. As I said , there is nothing wrong with wanting to keep nice things from being damaged while being able to use them and enjoy them . Comments (25)The only worry with baked goods, e.g, mincemeat tarts, any viruses inside having been cooked, would be with what might have contaminated the surfaces, later. If you're worried, give 'em a quick blast to the surface in the regular oven or microwave. If I get any, I plan to string 'em on a board hung from the clothesline, to outfox the foxes, coons, skunks, bunnies and rats. But I may have to put'em in a plastic box against the birds and deer ... but will have to leave 'em for several days, due to the plastic reducing the power of the sunlight. Probably bring 'em in overnight, for deer can access the clothesline.
