What is this connector in the thermocouple?

Hi,
I have a gas water heater. It looks like the thermocouple is not working, so I got the universal thermocouple for replacement.
The new thermocouple is fully copper, however the thermocouple in the heater has some sort of connector in the copper. I would like to what is the use of it? Will the new thermocouple work just fine?
