Copper or PEX Plumbing, if money is not an object?

For new construction in South TX, I'm leaning towards copper plumbing, because I trust it to last long, and unlike PEX, it's not known to be chewed threw by rodents or (certain) insects.


In this location, freezing temperatures are rare, and the water generally has a basic pH from all the limestone, so the "advantages" of PEX of not freezing and not being harmed by acidic water aren't worth that much.


Anything else I should consider? Yeah, I know it's going to be harder to find someone to do it, but I'm sure there are still plumbers alive who are good at copper.
