How do I fix this?

I need to fix the gaping holes (ie, mouse highway) under our sink and cabinet. Note: this is my late in-laws' home and a family friend built this kitchen for them in the late 80s. They never fixed it. Now that we live here, it NEEDS to be done. Photo with the white PVC pipe/red cap visible is under the sink, leading to the cabinet between the sink and the wall. It's a huge gap and not much to work with on either side. The other photo is in the cabinet (which isn't usable for this reason), leading to the wall. Pipe is copper, so I realize I can't use steel wool. Thinking of using a chrome escutcheon for the space against the wall. But have no idea how to fix the one leading from the sink to the cabinet. Gap is bigger than a typical escutcheon, I don't know how I'd get foam and/or copper mesh to stay in that space. Any thoughts or ideas?
