Wood Paneling paint or Restain?

We have a dining room that is covered in solid wood paneling. I know it’s a cardinal sin to paint solid wood, but I just hate how dark it makes our room and instead of feeling cozy I feel like it just keeps our house in the 70s. I’m thinking of painting it off white, but I’m also considering pickling it or staining it a lighter less red undertone. The other walls in the room are a built in with the same wood and a new wall with Sheetrock we built for our kitchen. We are replacing our floors with a warm brown lvp (the parquet is not in good shape so don’t come for me for removing that either!). Would you paint this white, stain it lighter, pickle it, or just remove it and replace it (most likely expensive and time consuming with the windows)?
